Summer is here and it’s time to enjoy some watermelon. While this fruit is delicious, it is also very healthy.
Watermelon is 92 percent water and a great way to stay hydrated. It is one of the lowest calorie fruits and is loaded with nutrients such as vitamin C, vitamin A, potassium and magnesium to name a few.
Enjoy these three watermelon-based snack recipes.
Watermelon Pizza
1 watermelon1 cup coconut yogurt
½ cup strawberries, sliced in half
½ cup raspberries
½ cup cherries
½ cup blueberries
½ cup pomegranate seeds
Honey or maple syrup, optional
With a sharp knife cut off a circular slice of watermelon right down the middle, about two to three inches thick. Lay flat. Using a spatula, evenly spread a layer of yogurt around the watermelon. Layer the fresh fruits on top as you please. Drizzle honey or maple syrup if desired.
Watermelon Key Lime Slushie
3 cups watermelon, cut into cubes6 to 8 key limes
¼ cup sugar
2 cups ice
Place watermelon in freezer for one hour. Zest key limes into a bowl. Cut and juice limes into a separate bowl. Add frozen watermelon into blender with sugar, lime juice and lime zest. Pulse until blended (add up to ½ cup water if it seems too thick). Add ice to mixture and blend. Transfer to glasses and serve.
Watermelon Salad
3 cups watermelon, cubed1.5 cups sliced cucumbers, remove seeds
2 tablespoons mint, freshly sliced
1/3 cup feta cheese, crumbled
3 tablespoons olive oil
1 tablespoon lime juice
Place watermelon, cucumber and mint in a bowl. In a separate bowl, whisk together olive oil, lime juice and add a dash of salt and pepper. Drizzle this dressing over the melon mixture and toss. Sprinkle with feta cheese and serve.
